Ingredients

The carrots

  • 1.5 lbs. baby rainbow carrots

The glaze

  • 1 tablespoon maple syrup
  • 1 tablespoon stone ground mustard
  • 1 tablespoon dijon mustard
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • 1 teaspoon diced chives

Optional garnish

  • to taste fresh thyme

Instructions

  1. Preheat the oven to 425°F.
  2. Mix maple syrup, stone ground mustard, dijon mustard, garlic powder, and salt in a small bowl.
  3. Place the carrots in a baking dish and pour half of the maple dijon mixture over them, tossing to coat.
  4. Bake the carrots for 20-25 minutes until tender.
  5. Remove from the oven, add the remaining sauce, and garnish with diced chives and optional thyme before serving.
