Ingredients

  • 1 tablespoon baking powder
  • 3 teaspoons xanthan gum
  • 1 ½ teaspoons fine kosher salt
  • 2 tablespoons light olive oil
  • 1 tablespoon apple cider vinegar
  • ½ to 1 cup warm water

Instructions

  1. Proof the yeast by whisking together warm non-dairy milk, yeast, and sugar; let it sit until bubbly.
  2. In a large bowl, combine the gluten-free flour, baking powder, xanthan gum, and salt.
  3. Add the yeast mixture, olive oil, and apple cider vinegar to the dry ingredients and mix well.
  4. Gradually add warm water until a soft, sticky dough forms.
  5. Knead the dough for 5 minutes using a dough hook.
  6. Place the dough in a parchment-lined bread pan and cover it to rise in a warm place until doubled in size, about 70-90 minutes.
  7. Score the top of the loaf and dust with flour before baking.
  8. Bake in a preheated oven at 350°F for 35 to 55 minutes until golden brown.
  9. Allow the bread to cool before slicing.
