Ingredients

  • 1 cup Sweet Rice Flour
  • ½ cup Potato Starch
  • ¼ cup Corn Starch
  • ¼ cup Protein Powder
  • ½ cup Sugar or granulated sweetener
  • 1 TBSP Bread Machine Yeast
  • 2 tsp Baking Powder
  • 1 ½ tsp Xanthan Gum
  • ¼ tsp Salt
  • tsp Cream Of Tartar
  • ¾ cup Almond Milk
  • 3 TBSP Dairy Free Butter
  • 1 TBSP Rice Vinegar
  • 2 eggs Eggs

Instructions

  1. Preheat the oven to 200ºF and prepare a loaf pan with cooking spray.
  2. In a stand mixer, combine the first ten dry ingredients.
  3. Heat the almond milk and 2 tablespoons of butter to 100ºF and add to the dry ingredients while mixing on low.
  4. Add the rice vinegar and eggs, then mix on medium speed for 5 minutes.
  5. Pour the batter into the prepared pan and brush the top with melted butter.
  6. Cover the loaf with plastic wrap and place it in the warm oven to rise for 30 minutes.
  7. Uncover and let it rise for an additional 10 minutes until doubled in size.
  8. Remove from the oven, preheat to 325ºF, and bake for 30 minutes until golden brown.
  9. Allow the bread to cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
