Ingredients

The dough

  • 2 ½ tsp active dry yeast
  • 3 ½ Tbsp sugar
  • ¼ cup warm water
  • 1 ¼ cups milk
  • 2 Tbsp canola oil
  • 2 Tbsp butter
  • 3 large eggs
  • 1 Tbsp lemon juice

The flours

  • 2 cups white rice flour
  • ½ cup tapioca flour
  • ½ cup potato starch
  • cup cornstarch
  • 1 Tbsp xanthan gum

The seasonings

  • 1 ¾ tsp salt
  • 1 tsp baking powder

Instructions

  1. Proof the yeast by mixing it with sugar and warm water, then let it rest for 5-10 minutes.
  2. Add the remaining sugar, milk, canola oil, butter, eggs, and lemon juice to the yeast mixture and combine.
  3. Add the dry ingredients and mix on low speed, then increase to medium speed and mix for 5 minutes.
  4. Pour the dough into a buttered baking dish and smooth the top.
  5. Let the dough rise in a warm place for 1 to 1 ¼ hours.
  6. Preheat the oven to 375°F during the last 10 minutes of rising.
  7. Bake the bread for 20 minutes, then reduce the temperature to 350°F, tent with foil, and bake for an additional 20 minutes.
  8. Cool the bread in the pan for a few minutes, then transfer to a wire rack to cool completely.
