Chocolate Covered Fruit Nut Granola Bars

Instructions
- Boil about 2 cups of water and soak the pitted dates until softened.
- Preheat the oven to 350°F and toast the oats, sunflower seeds, and nuts on a baking sheet for 10-12 minutes until slightly golden.
- In a food processor, combine the softened dates and peanut butter until well mixed.
- In a large bowl, mix the date mixture with the oats, nuts, sunflower seeds, chia seeds, and cranberries or raisins.
- Press the mixture into an 8x8 pan lined with parchment paper and refrigerate overnight to set.
- The next day, melt the chocolate in the microwave in 30-second intervals, stirring in between.
- Remove the bars from the pan, cut into 10 squares, and drizzle melted chocolate over each bar.
- Optionally, sprinkle with sea salt.
