Instructions
- 1. Preheat the oven to 375°F and prepare a baking sheet with parchment paper.
- 2. Cream the butter and sugars together in a stand mixer until smooth.
- 3. Add the egg and vanilla extract, mixing until well combined.
- 4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- 5. Gradually add the dry ingredients to the wet mixture, mixing until just incorporated.
- 6. Stir in the oats and white chocolate chunks.
- 7. Form about 1 tablespoon of dough into balls and tuck in 6-8 pomegranate arils into each ball.
- 8. Bake for 10-12 minutes until golden brown, then cool on the baking sheet for 2 minutes before transferring to a wire rack.
