Ingredients

  • 1 cup unsalted butter at room temperature
  • ½ cup light brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup old fashioned oats
  • 1 cup white chocolate chunks
  • 1 cup pomegranate arils

Instructions

  1. 1. Preheat the oven to 375°F and prepare a baking sheet with parchment paper.
  2. 2. Cream the butter and sugars together in a stand mixer until smooth.
  3. 3. Add the egg and vanilla extract, mixing until well combined.
  4. 4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. 5. Gradually add the dry ingredients to the wet mixture, mixing until just incorporated.
  6. 6. Stir in the oats and white chocolate chunks.
  7. 7. Form about 1 tablespoon of dough into balls and tuck in 6-8 pomegranate arils into each ball.
  8. 8. Bake for 10-12 minutes until golden brown, then cool on the baking sheet for 2 minutes before transferring to a wire rack.
