Instructions
- Preheat the oven to 350°F and prepare two cookie sheets with cooking spray.
- If using a flax egg, mix flax and water in a bowl and set aside.
- Beat coconut oil and sugars until creamy, then add vanilla and egg (or flax mixture) and mix until combined.
- Incorporate flour, baking soda, and salt until just combined, then fold in chocolate chips and pomegranate arils.
- Roll the dough into 16 balls and space them 2 inches apart on the cookie sheets.
- Bake one sheet at a time for 11-13 minutes, until slightly underdone in the center.
- Cool on a wire rack for 20 minutes before serving.
