Instructions
- Preheat the oven to 350 degrees.
- In a medium bowl, combine the rolled oats, whole wheat flour, baking powder, salt, and cinnamon.
- Using an electric mixer, cream the softened butter with both sugars until well combined.
- Add the egg and vanilla extract to the butter mixture and mix thoroughly.
- Gradually add the oat mixture to the wet ingredients and mix until just combined.
- Fold in the dried pomegranate seeds and mini chocolate chips.
- Drop large teaspoons of the batter onto ungreased cookie sheets, spacing them about 1 inch apart.
- Bake for 13-15 minutes or until the cookies are golden.
- Let the cookies rest on the cookie sheets for 2 minutes before transferring them to wire racks to cool.
