Ingredients

The base

  • 1 ½ cups rolled oats
  • ¾ cups whole wheat flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon

The wet ingredients

  • ½ cup unsalted butter, softened
  • ¼ cup white sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

The mix-ins

  • ½ cup dried pomegranate seeds
  • ½ cup mini chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a medium bowl, combine the rolled oats, whole wheat flour, baking powder, salt, and cinnamon.
  3. Using an electric mixer, cream the softened butter with both sugars until well combined.
  4. Add the egg and vanilla extract to the butter mixture and mix thoroughly.
  5. Gradually add the oat mixture to the wet ingredients and mix until just combined.
  6. Fold in the dried pomegranate seeds and mini chocolate chips.
  7. Drop large teaspoons of the batter onto ungreased cookie sheets, spacing them about 1 inch apart.
  8. Bake for 13-15 minutes or until the cookies are golden.
  9. Let the cookies rest on the cookie sheets for 2 minutes before transferring them to wire racks to cool.
