Instructions
- Preheat the oven to 350°F and grease a casserole dish.
- In a saucepan, heat 2 tablespoons of butter and sauté the onion, jalapeños, and garlic for about a minute, then add the bell pepper.
- In a large bowl, combine the cornbread mix, sweet corn, cream style corn, eggs, bell pepper mixture, sour cream, and cheese if using.
- Pour the mixture into the prepared casserole dish and bake until the top is lightly browned, about 40 to 50 minutes.
