Ingredients

  • 1-2 pieces Jalapeños peppers, diced
  • 1 pieces bell pepper, diced
  • cup onion, diced
  • 1 teaspoon minced garlic
  • 1 15 oz can cream style corn
  • 1 15 oz can sweet corn, drained
  • cup unsalted butter, softened
  • 1 8 oz container sour cream
  • 2 large eggs, slightly beaten
  • 1 8.5 oz box cornbread mix
  • 1 teaspoon creole salt
  • ½ cup cheddar cheese, optional

Instructions

  1. Preheat the oven to 350°F and grease a casserole dish.
  2. In a saucepan, heat 2 tablespoons of butter and sauté the onion, jalapeños, and garlic for about a minute, then add the bell pepper.
  3. In a large bowl, combine the cornbread mix, sweet corn, cream style corn, eggs, bell pepper mixture, sour cream, and cheese if using.
  4. Pour the mixture into the prepared casserole dish and bake until the top is lightly browned, about 40 to 50 minutes.
