Creamy Corn with Bacon and Jalapenos

Ingredients

  • 4 slices center cut bacon
  • 3 oz 1/3 less fat cream cheese
  • ¾ cup fat free sour cream
  • 2 oz 50% reduced fat sharp cheddar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon chili powder
  • 20 oz frozen corn kernels
  • 1 medium jalapeno pepper
  • 2 cloves garlic
  • 2 scallions sliced

Instructions

  1. Preheat the oven to 400°F and prepare a 2 QT casserole dish with cooking spray.
  2. Cook the bacon until crispy, then drain and crumble it.
  3. In a large bowl, mix together the cream cheese, sour cream, cheddar, salt, pepper, and chili powder.
  4. Add the crumbled bacon, corn, diced jalapenos, minced garlic, and sliced scallions to the bowl and mix well.
  5. Transfer the mixture to the prepared baking dish and bake for 25-30 minutes until heated through.
  6. Allow to cool for a few minutes, stir, and serve.
