Ingredients

The base

  • 1 stick butter, melted
  • 1 cup sour cream
  • 1 box Jiffy corn bread mix
  • 1 can regular corn, undrained
  • 1 can creamed corn
  • 1 beaten egg

Toppings

  • to taste bacon
  • to taste scallions
  • to taste French fried onions

Instructions

  1. 1. Blend melted butter, sour cream, and beaten egg together.
  2. 2. Stir in the corn bread mix and both types of corn until well mixed.
  3. 3. Pour the mixture into a greased 2-quart casserole dish.
  4. 4. Bake at 350°F for 35 minutes.
  5. 5. Add toppings and bake for an additional 10 minutes, or sprinkle scallions after removing from the oven.
  6. 6. Ensure the corn is done when the middle is set.
