Instructions
- Preheat the oven to 325℉ (160℃) and spray a 2-quart baking dish with cooking spray.
- Melt 2 tablespoons of butter in a small pan, then sauté the onion, bell pepper, and Creole seasoning for 3-4 minutes. Set aside.
- In a medium bowl, whisk the eggs with half-and-half.
- In a large bowl, combine the onion mixture, sugar, salt, drained corn, cheddar cheese, and ½ cup of crushed crackers. Mix well.
- Pour the corn mixture into the prepared baking dish.
- Mix the remaining crushed crackers with 2 tablespoons of melted butter and spread over the top of the corn mixture. Add the remaining shredded cheese on top.
- Bake for 30-35 minutes until the edges are set and golden brown.
- Remove from the oven, top with parsley, and serve.
