Ingredients

The base

  • 4 tablespoons melted butter
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 1 teaspoon Creole seasoning
  • 3 large eggs
  • 1 cup half-and-half
  • 4 cups corn kernels
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese

The topping

  • cups buttery crackers, coarsely crushed
  • 2 tablespoons parsley, chopped
  • cooking spray for baking dish

Instructions

  1. Preheat the oven to 325℉ (160℃) and spray a 2-quart baking dish with cooking spray.
  2. Melt 2 tablespoons of butter in a small pan, then sauté the onion, bell pepper, and Creole seasoning for 3-4 minutes. Set aside.
  3. In a medium bowl, whisk the eggs with half-and-half.
  4. In a large bowl, combine the onion mixture, sugar, salt, drained corn, cheddar cheese, and ½ cup of crushed crackers. Mix well.
  5. Pour the corn mixture into the prepared baking dish.
  6. Mix the remaining crushed crackers with 2 tablespoons of melted butter and spread over the top of the corn mixture. Add the remaining shredded cheese on top.
  7. Bake for 30-35 minutes until the edges are set and golden brown.
  8. Remove from the oven, top with parsley, and serve.
