Homemade Vegan Hash Browns

vegan parmesan (optional)
Cooking Oil

favorite roasting oil or broth
Instructions
- Preheat the oven to 400°F (205°C) if baking.
- Shred the potatoes using a box grater or food processor.
- Rinse the shredded potatoes in a colander to remove starch, then soak in water for about 5 minutes.
- Rinse again and squeeze out excess water using a kitchen towel.
- If frying, mix the potatoes with the other ingredients and pan fry over medium heat until crisp, about 10-15 minutes, flipping occasionally.
- If baking, mix the potatoes with the other ingredients, spread evenly on a parchment-lined baking sheet, and bake for 30-40 minutes until desired crispness is achieved.
