Souper Cheesy Chicken Zucchini Rice

Instructions
- 1. Heat a large pot over medium heat and add the butter.
- 2. Add the chicken, season with salt and pepper, and cook until browned and cooked through.
- 3. Stir in the garlic and cook for 30 seconds.
- 4. Add the rice and stir to coat with the butter; cook until the rice smells toasted.
- 5. Slowly pour in the milk and chicken broth, then add the zucchini, thyme, parsley, and onion powder.
- 6. Bring to a boil, cover, and reduce heat to low; simmer until the rice is fluffy.
- 7. Stir in the cheese until melted. Optionally, transfer to a baking dish, top with more cheese, and bake until golden.
