Souper Cheesy Chicken Zucchini Rice

Ingredients

  • 4 tablespoons butter
  • 1 pound boneless skinless chicken breasts or tenders, diced
  • to taste kosher salt
  • to taste pepper
  • 3 cloves garlic, minced or grated
  • cups basmati or jasmine rice
  • cups milk
  • cups low sodium chicken broth
  • 2 small to medium zucchini, grated
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon onion powder
  • 2 cups shredded cheddar cheese

Instructions

  1. 1. Heat a large pot over medium heat and add the butter.
  2. 2. Add the chicken, season with salt and pepper, and cook until browned and cooked through.
  3. 3. Stir in the garlic and cook for 30 seconds.
  4. 4. Add the rice and stir to coat with the butter; cook until the rice smells toasted.
  5. 5. Slowly pour in the milk and chicken broth, then add the zucchini, thyme, parsley, and onion powder.
  6. 6. Bring to a boil, cover, and reduce heat to low; simmer until the rice is fluffy.
  7. 7. Stir in the cheese until melted. Optionally, transfer to a baking dish, top with more cheese, and bake until golden.
