Ingredients

The rice

  • 1 cup uncooked long-grain brown rice
  • 2 ¼ cups low sodium chicken broth or vegetable broth

The vegetables

  • 2 ½ cups shredded zucchini

The cheese

  • 1 cup shredded 50% reduced fat sharp cheddar

The seasonings

  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼-½ teaspoon garlic powder

The liquid

  • 1-2 tablespoons skim milk

Instructions

  1. Cook the rice and broth together according to the rice's package directions.
  2. Once the rice is cooked, fluff it with a fork.
  3. Stir in the zucchini, shredded cheese, salt, pepper, and garlic powder.
  4. Cook on low for 5-10 minutes, stirring occasionally to melt the cheese and heat the zucchini.
  5. Add milk as needed to thin out the texture.
