Baked Cheesy Rice
Ingredients
The rice mixture

The toppings

sour cream

shredded cheddar cheese
Instructions
- Preheat the oven to 375°F and lightly grease an 8x8-inch baking dish.
- Bring the water or vegetable broth to a boil.
- Rinse the rice well in a fine mesh sieve and set aside.
- Grate the shallot and garlic into a paste.
- In the baking dish, combine the rice, grated shallot and garlic, butter, Cajun seasoning, salt, and pepper.
- Pour in the boiling broth and stir well.
- Cover the dish tightly and bake for 25 minutes.
- After 25 minutes, stir the rice. If it isn't done, add a splash of water and bake for an additional 5 minutes.
- Stir in the sour cream and half of the cheddar cheese, then add the remaining cheese on top.
- Bake uncovered until the cheese is melted, about 5 minutes, then serve.
