Baked Cheesy Rice

Ingredients

The rice mixture

  • 1 ½ cups long grain white rice
  • 2 ⅔ cups water or vegetable broth
  • 1 medium shallot
  • 3 cloves garlic
  • 2 tablespoons butter
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

The toppings

  • 3-4 tablespoons sour cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F and lightly grease an 8x8-inch baking dish.
  2. Bring the water or vegetable broth to a boil.
  3. Rinse the rice well in a fine mesh sieve and set aside.
  4. Grate the shallot and garlic into a paste.
  5. In the baking dish, combine the rice, grated shallot and garlic, butter, Cajun seasoning, salt, and pepper.
  6. Pour in the boiling broth and stir well.
  7. Cover the dish tightly and bake for 25 minutes.
  8. After 25 minutes, stir the rice. If it isn't done, add a splash of water and bake for an additional 5 minutes.
  9. Stir in the sour cream and half of the cheddar cheese, then add the remaining cheese on top.
  10. Bake uncovered until the cheese is melted, about 5 minutes, then serve.
