Healthy Chocolate Coated Peanut Butter Fudge

The chocolate coating
Instructions
- Drain the excess water from the silken tofu by wrapping it in paper towels and placing a heavy object on top.
- In a large bowl, mix the powdered peanut butter, natural peanut butter, soy protein powder, and salt.
- Add honey, vanilla extract, and the drained tofu to the bowl and mix until smooth using an electric mixer.
- Place the mixture on parchment paper and fold the paper over the dough, then press it out to about ½ inch thick.
- Cut out shapes using a pumpkin-shaped cookie cutter and re-incorporate excess dough to cut more shapes.
- Refrigerate the cut pieces uncovered for at least 4 hours.
- Melt the chocolate chips in a microwavable bowl, stirring until smooth.
- Spread the melted chocolate over the peanut butter shapes and refrigerate until the chocolate hardens.
