Ingredients

Korean BBQ Sauce

  • ½ cup soy sauce
  • ¼ cup ketchup
  • ¼ cup brown sugar
  • 1 tablespoon honey
  • 3 tablespoons rice wine vinegar
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon garlic
  • cup chicken broth
  • 2 teaspoons cornstarch
  • 2 tablespoons sesame oil

Chicken

  • 1 ½ pounds chicken breasts
  • ½ teaspoon salt
  • teaspoon black pepper
  • 3 green onions optional – sliced for garnish
  • 1 teaspoon toasted sesame seeds

Instructions

  1. Prepare the Korean BBQ sauce by combining ketchup, soy sauce, honey, brown sugar, rice vinegar, sesame oil, and garlic in a saucepan over medium-high heat and bring to a boil.
  2. In a small bowl, mix chicken broth and cornstarch until dissolved, then stir into the boiling sauce and remove from heat.
  3. Cut the chicken breasts into bite-size pieces and season with salt and black pepper.
  4. Heat sesame oil in a large frying pan, add the chicken pieces, and cook for 3-4 minutes on each side until cooked through.
  5. Add most of the Korean BBQ sauce to the pan and stir to coat the chicken, adding water if the sauce is too thick.
  6. Serve the chicken over Jasmine rice and garnish with sliced green onions and toasted sesame seeds.
