Ingredients

The fruit dip

  • 1 cup raw cashews, soaked
  • ½ cup almond milk (or non-dairy milk of choice)
  • 1 cup frozen or fresh pitted cherries
  • 1 teaspoon pure vanilla extract
  • 2-3 tablespoons coconut nectar syrup (or liquid sweetener of choice)

The kabobs

  • to taste fruit of choice (e.g., strawberries, cantaloupe, grapes, nectarines, kiwi, watermelon)
  • as needed skewers

Instructions

  1. Soak the cashews in water overnight or for at least 8 hours, then drain and rinse them.
  2. Blend the soaked cashews with almond milk, pitted cherries, vanilla, and sweetener until smooth.
  3. Chill the fruit dip for a few hours or enjoy it immediately.
  4. Prepare the fruit kabobs or drizzle the dip over a bowl of fruit.
  5. Store any leftover dip in a sealed container in the fridge for 1-1.5 weeks.
