20-Minute Ground Chicken Stir Fry

Ingredients

The stir-fry

  • 1 lb ground chicken
  • 2 tbsp sesame oil
  • 3 cups broccoli florets
  • 2 cups sliced carrots
  • 1 red bell pepper, sliced

The stir-fry sauce

  • ¼ cup coconut aminos
  • 2 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 2 tsp arrowroot starch

Instructions

  1. Heat a skillet over medium heat and add 1 tbsp of sesame oil.
  2. Add the ground chicken to the skillet, breaking it into small chunks, and cook until browned, about 7-8 minutes.
  3. While the chicken is cooking, chop the broccoli, carrots, and bell pepper.
  4. Mix all the stir fry sauce ingredients in a small bowl or jar.
  5. Once the chicken is cooked, add the remaining 1 tbsp of sesame oil and the chopped veggies to the skillet.
  6. Sauté the veggies for 4-5 minutes until they start to soften.
  7. Whisk the stir fry sauce and pour it over the chicken and veggies, mixing to coat.
  8. Cook for an additional 2-3 minutes to allow the sauce to thicken, then serve.
