Ingredients

The marinade

  • 1 tbsp grated ginger
  • 1 tbsp crushed garlic
  • ¼ cup honey
  • ¼ cup low sodium soy sauce
  • 2 tbsp avocado oil
  • ¼ tsp black pepper

The kebabs

  • 1.25 lbs boneless skinless chicken breast, cut into 1-inch chunks
  • 2 bell peppers, cut into bite-sized chunks
  • 1 onion, cut into wedges
  • 4 metal or wooden skewers

Instructions

  1. Combine ginger, garlic, honey, soy sauce, avocado oil, and black pepper in a large bowl.
  2. Add chicken and veggies to the bowl, ensuring they are well coated in the marinade, and marinate in the fridge for 2-24 hours.
  3. Skewer the ingredients, alternating between chicken, peppers, and onions, until each skewer has 4-5 chunks of chicken.
  4. Preheat the grill to medium heat and coat it with oil to prevent sticking.
  5. Grill the skewers for 6-8 minutes on each side or until the chicken and veggies are cooked through.
  6. Serve and enjoy.
