Homemade Oreos with Peanut Butter

Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the cocoa powder, flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Scoop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, then let cool on the baking sheet for a few minutes before transferring to a wire rack.
- For the filling, beat together the powdered sugar, peanut butter, and vanilla extract until smooth.
- Once the cookies are completely cool, spread the peanut butter filling on the flat side of one cookie and sandwich it with another.
