Instructions
- Preheat the oven to 350°F and prepare a baking sheet with parchment or a silicone mat.
- In a bowl, combine the cake mix, shortening, and eggs, mixing until smooth.
- Use a cookie scoop to form round balls of dough and place them on the baking sheet.
- Bake for 10-12 minutes until the edges are set and the tops are craggly.
- Cool the cookies on the baking sheet for about 5 minutes, then transfer to a cooling rack.
- While the cookies cool, prepare the frosting by beating the butter until creamy, then gradually add the powdered sugar and vanilla.
- Scoop the frosting into a zip-top bag, cut off a corner, and pipe frosting onto half of the cookies.
- Sandwich the cookies together and enjoy.
