Instructions
- Cream butter and sweetener until fluffy, then beat in egg and vanilla.
- In a separate bowl, whisk together almond flour, cocoa powder, and sea salt.
- Combine wet and dry ingredients, mixing until uniform.
- Shape dough into a rectangle, wrap in plastic, and chill for 1 hour.
- Roll out dough between parchment paper to about ¼-inch thick.
- Preheat oven to 400°F (204°C) and line a baking sheet with parchment.
- Cut cookies using a mason jar and place on the baking sheet.
- Bake for 10-12 minutes until firm, then cool completely.
- Beat together coconut oil and powdered sweetener, adding heavy cream until stiff frosting forms.
- Pipe filling onto cooled cookies and sandwich with another cookie.
