Homemade Birthday Oreos

Instructions
- Mix the dry ingredients for the cookies in a stand mixer, then add half of the butter and mix on low.
- Add the remaining butter and mix until combined, then wrap the dough and chill for about 30 minutes.
- Preheat the oven to 350°F and roll out the dough between parchment paper to 1/8-inch thickness.
- Cut out cookies with a round cutter and bake for 10 minutes, then let them cool completely.
- To make the filling, beat the butter in a mixer, then add powdered sugar, vanilla, and salt until fluffy.
- Pipe the frosting onto half of the cookies, add sprinkles, and top with the other half to make sandwiches.
