Instructions
- Mash the tofu in a large bowl, leaving some large chunks.
- In a medium bowl, combine the remaining ingredients except for olive oil and whisk until smooth.
- Heat olive oil in a skillet over medium-high heat.
- Add the mashed tofu to the skillet and fry until lightly browned, avoiding excessive stirring.
- Pour the sauce over the tofu and fold to combine, cooking until the desired consistency is reached.
- Warm the wrap, then layer with refried beans, tofu scramble, collard greens, tomato, avocado, and herb of choice.
