Ingredients

Toppings

  • 1 wrap wrap of choice
  • ¼ cup refried beans
  • to taste diced tomato lightly salted
  • to taste sliced avocado lightly salted
  • to taste cooked collard greens sautéed in olive oil and lightly dusted with salt
  • to taste herb of choice

Tofu Scramble

  • 1 block firm to extra-firm tofu, pressed for 1 hour
  • 2 tbsp nutritional yeast
  • ½ tsp turmeric powder
  • ½ tsp paprika
  • ½ tsp onion powder
  • ¼ tsp black salt
  • 2 cloves garlic, pressed
  • ¼ cup oat milk
  • to taste fresh cracked pepper
  • 1 tbsp olive oil

Instructions

  1. Mash the tofu in a large bowl, leaving some large chunks.
  2. In a medium bowl, combine the remaining ingredients except for olive oil and whisk until smooth.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Add the mashed tofu to the skillet and fry until lightly browned, avoiding excessive stirring.
  5. Pour the sauce over the tofu and fold to combine, cooking until the desired consistency is reached.
  6. Warm the wrap, then layer with refried beans, tofu scramble, collard greens, tomato, avocado, and herb of choice.
