Chimichurri Tempeh

Ingredients

  • 8 oz tempeh, sliced into 4 slabs
  • ½ cup chimichurri, plus more for serving
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon olive oil or olive oil spray

Instructions

  1. Steam the tempeh for 10 minutes to allow the marinade to penetrate.
  2. Prepare the chimichurri if you don't have it ready.
  3. Mix together ½ cup of chimichurri and 1 tablespoon of soy sauce or tamari.
  4. Place the steamed tempeh on a plate and pour the marinade over it, rubbing it in. Let it sit for 1 hour, flipping occasionally.
  5. Preheat a large heavy-bottomed pan over medium-high heat. Add olive oil or spray with olive oil.
  6. Cook the tempeh in a single layer for about 3-4 minutes until lightly browned, then flip and cook the other side for another 3-4 minutes.
  7. Add the remaining marinade to the pan and cook for an additional 3-4 minutes, turning occasionally.
  8. Plate and serve with additional chimichurri.
