Chimichurri Tempeh

tempeh, sliced into 4 slabs

chimichurri, plus more for serving

soy sauce or tamari

Instructions
- Steam the tempeh for 10 minutes to allow the marinade to penetrate.
- Prepare the chimichurri if you don't have it ready.
- Mix together ½ cup of chimichurri and 1 tablespoon of soy sauce or tamari.
- Place the steamed tempeh on a plate and pour the marinade over it, rubbing it in. Let it sit for 1 hour, flipping occasionally.
- Preheat a large heavy-bottomed pan over medium-high heat. Add olive oil or spray with olive oil.
- Cook the tempeh in a single layer for about 3-4 minutes until lightly browned, then flip and cook the other side for another 3-4 minutes.
- Add the remaining marinade to the pan and cook for an additional 3-4 minutes, turning occasionally.
- Plate and serve with additional chimichurri.
