Maple Grilled Tempeh

Ingredients

The tempeh and marinade

  • 8 ounces tempeh
  • 3 tablespoons soy sauce
  • 3 tablespoons maple syrup
  • 1 teaspoon rice vinegar
  • 2 cloves garlic
  • ½ teaspoon powdered chipotle

Optional ingredients

  • 1-2 pieces portobello mushrooms
  • cups cooked quinoa or brown rice
  • 1 handful blanched green beans

Instructions

  1. Cut the tempeh diagonally into 4 triangles and slice each triangle in half horizontally if possible.
  2. Combine soy sauce, maple syrup, rice vinegar, garlic, and chipotle powder in a small bowl to make the marinade.
  3. Place tempeh in a baking dish and pour the marinade over it, ensuring all pieces are coated. Marinate for 30 minutes to 2 days, flipping occasionally.
  4. Grill the tempeh on a medium hot grill for a few minutes on each side, brushing with leftover marinade.
  5. Serve the grilled tempeh on a sandwich, over rice, or with grilled mushrooms and quinoa.
