Maple Grilled Tempeh

Instructions
- Cut the tempeh diagonally into 4 triangles and slice each triangle in half horizontally if possible.
- Combine soy sauce, maple syrup, rice vinegar, garlic, and chipotle powder in a small bowl to make the marinade.
- Place tempeh in a baking dish and pour the marinade over it, ensuring all pieces are coated. Marinate for 30 minutes to 2 days, flipping occasionally.
- Grill the tempeh on a medium hot grill for a few minutes on each side, brushing with leftover marinade.
- Serve the grilled tempeh on a sandwich, over rice, or with grilled mushrooms and quinoa.
