Ingredients

Main Ingredients

  • 1 carcass turkey
  • 2 cups vegetable scraps
  • a few sprigs fresh herbs (rosemary, thyme, sage)

Optional Ingredients

  • 1 clove garlic (smashed)
  • 1 tsp black peppercorns
  • 1 leaf bay leaf
  • 1 neck turkey (raw or cooked)

Instructions

  1. Add all ingredients to a large soup pot.
  2. Cover completely with water, plus an extra inch.
  3. Bring to a low simmer on medium heat.
  4. Cook for 1½ to 2 hours until a rich broth is achieved.
  5. Cool completely if not using immediately.
  6. Refrigerate for up to 5 days or freeze in 2-cup portions.
