Homemade Turkey Stock

Instructions
- Place the turkey carcass and any other turkey parts into a large slow cooker.
- Add the carrots, celery, onion, garlic, and fresh herbs around the turkey parts.
- Pour water over all of the ingredients, ensuring they are covered.
- Add kosher salt, starting with ½ tablespoon and adjusting to taste later.
- Cover the slow cooker and cook on low for 12 hours or overnight.
- Remove the cover and carefully take out large chunks of turkey and other ingredients.
- Strain the broth through a fine mesh sieve into a large pot.
- Press the ingredients in the sieve to extract more broth.
- Discard the solids and use the turkey broth as desired.
