Homemade Turkey Stock

Ingredients

  • 1 carcass carcass of a cooked large turkey
  • 2 large carrots, chopped into chunks
  • 2 stalks celery, chopped into chunks
  • 1 medium onion, roughly chopped
  • 3 cloves garlic, smashed
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh oregano
  • 10-12 cups water
  • ½-1 tablespoon kosher salt

Instructions

  1. Place the turkey carcass and any other turkey parts into a large slow cooker.
  2. Add the carrots, celery, onion, garlic, and fresh herbs around the turkey parts.
  3. Pour water over all of the ingredients, ensuring they are covered.
  4. Add kosher salt, starting with ½ tablespoon and adjusting to taste later.
  5. Cover the slow cooker and cook on low for 12 hours or overnight.
  6. Remove the cover and carefully take out large chunks of turkey and other ingredients.
  7. Strain the broth through a fine mesh sieve into a large pot.
  8. Press the ingredients in the sieve to extract more broth.
  9. Discard the solids and use the turkey broth as desired.
