Instructions
- 1. Place the turkey carcass in a large pot and cover with cold water.
- 2. Bring to a boil over medium-high heat, then reduce heat and skim off foam.
- 3. Add onion, carrot, celery, and salt to the pot.
- 4. Optional: Tie herbs in cheesecloth or add directly to the pot.
- 5. Simmer gently for at least 1 hour, up to 4 hours for more flavor.
- 6. Strain the broth through a fine-mesh strainer or cheesecloth.
- 7. Chill the broth in the refrigerator overnight.
- 8. Remove the fat from the top, then store the broth in containers.
