Turkey Broth

Ingredients

The broth

  • 1 whole roasted turkey carcass
  • 12 cups cold water
  • 1 medium onion
  • 1 large carrot
  • 1 rib celery
  • 1 tablespoon salt

The sachet

  • 6 stems fresh parsley
  • 1 sprig fresh thyme
  • 2 cloves garlic
  • 1 leaf bay leaf
  • 1 teaspoon whole black peppercorns

Instructions

  1. 1. Place the turkey carcass in a large pot and cover with cold water.
  2. 2. Bring to a boil over medium-high heat, then reduce heat and skim off foam.
  3. 3. Add onion, carrot, celery, and salt to the pot.
  4. 4. Optional: Tie herbs in cheesecloth or add directly to the pot.
  5. 5. Simmer gently for at least 1 hour, up to 4 hours for more flavor.
  6. 6. Strain the broth through a fine-mesh strainer or cheesecloth.
  7. 7. Chill the broth in the refrigerator overnight.
  8. 8. Remove the fat from the top, then store the broth in containers.
