Lemon Garlic Herb Rice

Ingredients

The rice

  • 2 cups long-grain white rice
  • 4 cups water

The flavorings

  • 4 cloves garlic, chopped
  • ¼ cup butter
  • ½ teaspoon kosher salt
  • ¼ teaspoon coarsely ground black pepper
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh Italian herbs (basil, rosemary, thyme, oregano)
  • Juice and zest of 1 large lemon or 2 small lemons

Instructions

  1. Combine the rice, water, and garlic in a large pot or skillet.
  2. Bring to a boil, cover, and reduce heat to low, cooking for 20 minutes.
  3. Remove from heat and let stand covered for 5 minutes.
  4. Stir in the butter, lemon juice, salt, and pepper until combined.
  5. Toss in the herbs and transfer to a serving dish.
  6. Top with freshly grated lemon rind and additional salt and pepper if desired.
