Lemon Rice

Ingredients

The rice

  • 1 cup brown rice
  • 1 ¾ cups coconut water
  • 1 tablespoon coconut oil
  • ¼ teaspoon kosher salt

The flavorings

  • 1 medium lemon (zest and juice, about ¼ cup juice)
  • 2 tablespoons Italian parsley (minced)

Instructions

  1. Rinse and drain the rice.
  2. Combine the rice, coconut water, salt, and coconut oil in a saucepan and bring to a boil.
  3. Cover, reduce heat to low, and simmer for 45 minutes, adding more coconut water if needed.
  4. Remove from heat, add lemon zest and juice, and fluff with a fork.
  5. Let rest for a few minutes, then stir in the parsley.
