Lemon Rice

coconut water

The flavorings

lemon (zest and juice, about ¼ cup juice)

Italian parsley (minced)
Instructions
- Rinse and drain the rice.
- Combine the rice, coconut water, salt, and coconut oil in a saucepan and bring to a boil.
- Cover, reduce heat to low, and simmer for 45 minutes, adding more coconut water if needed.
- Remove from heat, add lemon zest and juice, and fluff with a fork.
- Let rest for a few minutes, then stir in the parsley.
