Healthy Baked Vegan Corn Dogs

Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the cornmeal, almond flour, tapioca flour, baking powder, and salt in a bowl.
- Make a well in the dry ingredients and add the maple syrup, coconut milk, and apple cider vinegar. Mix until just combined.
- Cut each veggie hot dog into 4 pieces.
- Scoop small amounts of batter onto a parchment-lined baking sheet, shape them into ovals, and place a piece of hot dog on top.
- Cover each hot dog piece with more batter, shaping it around the hot dog.
- Bake for 28-30 minutes until browned on top.
- Allow to cool and enjoy!
