Healthy Baked Vegan Corn Dogs

Ingredients

The batter

  • ¾ cup fine grain cornmeal
  • ¾ cup fine grain almond flour
  • 2 tablespoons tapioca flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon sea salt
  • ¼ cup maple syrup
  • 3 tablespoons lite coconut milk
  • 2 teaspoons apple cider vinegar

The hot dogs

  • 3 veggie hot dogs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the cornmeal, almond flour, tapioca flour, baking powder, and salt in a bowl.
  3. Make a well in the dry ingredients and add the maple syrup, coconut milk, and apple cider vinegar. Mix until just combined.
  4. Cut each veggie hot dog into 4 pieces.
  5. Scoop small amounts of batter onto a parchment-lined baking sheet, shape them into ovals, and place a piece of hot dog on top.
  6. Cover each hot dog piece with more batter, shaping it around the hot dog.
  7. Bake for 28-30 minutes until browned on top.
  8. Allow to cool and enjoy!
