Ingredients

The batter

  • 1 cup blanched almond flour
  • 2 tablespoons golden flaxmeal
  • ¼ teaspoon baking soda
  • ¼ teaspoon celtic sea salt
  • 1 tablespoon apple cider vinegar
  • 3 large eggs

The filling

  • 4 pieces hot dogs, cut into 1 inch pieces

Instructions

  1. 1. Combine almond flour, flaxmeal, baking soda, and salt in a food processor.
  2. 2. Pulse in the apple cider vinegar and eggs.
  3. 3. Transfer the batter to a paper-lined mini muffin pan, using 1 tablespoon for each muffin.
  4. 4. Place one piece of hot dog into each muffin cup.
  5. 5. Bake at 350°F for 20-25 minutes.
  6. 6. Cool for 15 minutes before serving.
