Hot Honey Wings

Ingredients

The wings and seasoning

  • 1 Tbsp. bird chile powder or cayenne pepper
  • 1 Tbsp. kosher salt
  • 1 Tbsp. freshly ground black pepper
  • 2 lb. chicken wings

The glaze and toppings

  • 2 limes divided
  • ½ cup honey
  • 1 Tbsp. fish sauce
  • 3 Tbsp. chili crisp
  • 1 cup shishito peppers
  • 3–5 pieces red Thai chiles or jalapeños
  • ¼ cup cilantro leaves with tender stems
  • ¼ cup coarsely chopped salted dry-roasted peanuts

Instructions

  1. Mix the chile powder, salt, and black pepper in a small bowl.
  2. Arrange the chicken wings on a foil-lined baking sheet and rub with the spice mixture. Let sit for at least 15 minutes or chill for up to 1 day.
  3. Preheat the oven to 375°F and bake the wings for 30–40 minutes until slightly golden.
  4. Juice one lime into a bowl and mix in honey, fish sauce, and chili crisp. Toss the wings in this glaze.
  5. Prepare a grill for medium heat and grill the wings and shishito peppers for 5–8 minutes until charred.
  6. Serve the wings and peppers topped with chiles, cilantro, peanuts, and lime wedges.
