Ingredients

The salad

  • 6 cups baby spinach
  • ¼ large red onion, thinly sliced
  • ½ cup sautéed mushrooms or fresh mushrooms
  • 2 pieces hard boiled eggs, sliced
  • 4 slices thick cut bacon, roughly chopped

The dressing

  • 2 tablespoons bacon grease
  • 2 tablespoons red wine vinegar
  • ½ teaspoon Dijon mustard

Instructions

  1. In a mixing bowl, toss together the spinach, sliced onions, sautéed mushrooms, and boiled eggs.
  2. Add the chopped bacon to a non-stick pan and place it over medium heat. Fry the bacon for 2-3 minutes, until crispy. Remove the bacon and add it to the salad.
  3. Pour the bacon grease into a small bowl, then whisk in the red wine vinegar and Dijon mustard. Toss it through the salad and serve immediately.
