Spinach Salad with Bacon Dressing

For the bacon dressing

For the salad

baby spinach

hard-boiled eggs, peeled and quartered
Instructions
- Fry the bacon in a skillet over medium heat until crispy, then transfer to a paper towel-lined plate.
- Pour the bacon fat into a measuring cup, keeping ¼ cup, and add olive oil if necessary.
- Return the fat to the skillet over medium-high heat and add the red onion, sugar, vinegar, and salt and pepper.
- Cook until the onion softens, about 3 minutes, then remove from heat.
- In a large bowl, add the spinach and pour the warm bacon dressing over it, tossing to combine.
- Serve the salad on individual plates or a large platter, garnished with bacon and egg slices.
