Ingredients

For the bacon dressing

  • 1 pound bacon, finely chopped
  • ¼ cup olive oil (as needed)
  • 1 medium red onion, minced
  • ½ cup granulated sugar
  • ½ cup white vinegar
  • to taste salt and freshly ground black pepper

For the salad

  • 1 pound baby spinach
  • 4 large hard-boiled eggs, peeled and quartered

Instructions

  1. Fry the bacon in a skillet over medium heat until crispy, then transfer to a paper towel-lined plate.
  2. Pour the bacon fat into a measuring cup, keeping ¼ cup, and add olive oil if necessary.
  3. Return the fat to the skillet over medium-high heat and add the red onion, sugar, vinegar, and salt and pepper.
  4. Cook until the onion softens, about 3 minutes, then remove from heat.
  5. In a large bowl, add the spinach and pour the warm bacon dressing over it, tossing to combine.
  6. Serve the salad on individual plates or a large platter, garnished with bacon and egg slices.
