Warm Spinach Salad with Bacon

Instructions
- Boil water and simmer eggs for 7 minutes, then cool in cold water.
- Marinate minced shallot in vinegar with a pinch of salt and sugar for 10 minutes, then whisk in olive oil.
- In a skillet, heat 2 tablespoons of olive oil and cook bread crumbs until crisp and golden brown.
- Fry the diced bacon until crisp and set aside, saving the rendered fat for another use.
- Wash and lightly dry spinach leaves, then toss with some dressing and mix in bacon and breadcrumbs.
- Place the bowl over simmering water and toss the salad until the spinach is just wilted.
- Peel and quarter the eggs, season with salt and pepper, and serve with the salad.
