Warm Spinach Salad with Bacon

Ingredients

The salad

  • 1 lb spinach
  • 4 slices bacon
  • ¾ cup fresh bread crumbs
  • 2 T olive oil
  • 1 pinch salt
  • 1 pinch sugar
  • to taste olive oil
  • 1 shallot minced

The dressing

  • to taste vinegar (white balsamic, sherry, etc.)

The eggs

  • 2 to 3 eggs

Instructions

  1. Boil water and simmer eggs for 7 minutes, then cool in cold water.
  2. Marinate minced shallot in vinegar with a pinch of salt and sugar for 10 minutes, then whisk in olive oil.
  3. In a skillet, heat 2 tablespoons of olive oil and cook bread crumbs until crisp and golden brown.
  4. Fry the diced bacon until crisp and set aside, saving the rendered fat for another use.
  5. Wash and lightly dry spinach leaves, then toss with some dressing and mix in bacon and breadcrumbs.
  6. Place the bowl over simmering water and toss the salad until the spinach is just wilted.
  7. Peel and quarter the eggs, season with salt and pepper, and serve with the salad.
