Ingredients

Dough

  • 4 cups all-purpose flour
  • 2 teaspoons kosher salt
  • 1 teaspoon instant yeast
  • 2 cups lukewarm water

Tomato & Mozzarella Toppings

  • Olive oil for the skillets
  • to taste jarred tomato sauce
  • to taste fresh mozzarella
  • optional sea salt

Kale & Mushroom Toppings

  • 3 tablespoons extra-virgin olive oil
  • 1 bunch kale
  • 6 to 8 ounces mushrooms
  • to taste fresh mozzarella
  • to taste crème fraîche
  • optional sea salt

Instructions

  1. Prepare the dough by mixing flour, salt, and yeast in a bowl, then add lukewarm water and mix until a sticky dough forms.
  2. Cover the bowl and let the dough rise in a warm place for 1 to 1.5 hours until doubled in size.
  3. Preheat the oven to 550°F and prepare a floured surface for the dough.
  4. Deflate the dough and divide it into 6 equal portions, rolling each into a ball and letting them rest for 20 minutes.
  5. Grease the skillets with olive oil and transfer a dough ball to each skillet, stretching it to fit.
  6. For tomato and mozzarella pizzas, add sauce and mozzarella, then bake for 8 to 10 minutes until golden.
  7. For kale and mushroom pizzas, sauté mushrooms and kale, then top the dough with crème fraîche, vegetables, and mozzarella before baking.
