Ingredients

The squash

  • 1 lb butternut squash, peeled and cut into small chunks

The seasoning

  • 3 cloves garlic, minced
  • 4 tbsp butter, melted
  • 1 pinch salt
  • 3 dashes black pepper
  • ¼ cup parsley leaves, finely chopped
  • cup grated parmesan cheese

Instructions

  1. Preheat the oven to 400°F (207°C).
  2. Peel the butternut squash and remove the seeds.
  3. Cut the squash into cubes.
  4. In a bowl, toss the squash cubes with garlic, melted butter, salt, pepper, and parsley.
  5. Spread the squash on a baking sheet in a single layer.
  6. Roast for about 40 minutes until light brown and tender.
  7. Remove from the oven, sprinkle with Parmesan cheese, and return to the oven for 5 minutes to melt the cheese.
  8. Serve immediately.
