Kale and Chard Potlikker Soup

Instructions
- Prepare the kale and swiss chard by tearing the leaves from the stems and dicing the stems.
- Heat olive oil in a large pot over medium heat and add shallots and chopped stems with salt and red pepper flakes.
- Sauté the mixture for 8 to 10 minutes until softened.
- Add the kale and swiss chard leaves along with water and an additional teaspoon of salt.
- Cover and cook for 30 minutes until the leaves are wilted.
- Taste and adjust salt if necessary, then cook for an additional 10 minutes.
- Stir in lemon juice.
- If using, sauté the chicken sausage and add it to the soup.
- Serve the soup in bowls, adding half a boiled egg to each if desired.
