Sausage and Kale Soup

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 small onion, diced
  • ¾ pound smoked Italian sausage, cut into ½-inch slices
  • 3 cloves garlic, minced
  • ½ pound Yukon Gold potatoes, cut into 1-inch pieces
  • 2 medium carrots, cut into ½-inch slices
  • 1 bunch kale, ribs removed and leaves cut into bite-sized pieces
  • 1 teaspoon Magic Mushroom Powder or Diamond Crystal kosher salt
  • 6 cups bone broth or chicken broth
  • 2 teaspoons sherry vinegar or apple cider vinegar

Instructions

  1. 1. Turn on the sauté function on your Instant Pot and heat the olive oil.
  2. 2. Add the onion and sauté for about 1 minute.
  3. 3. Stir in the sausage and cook for another minute until lightly cooked.
  4. 4. Add the minced garlic and cook until fragrant.
  5. 5. Add the potatoes, carrots, and kale, then sprinkle with Magic Mushroom Powder or salt.
  6. 6. Pour in the broth and stir well, then turn off the sauté function.
  7. 7. Lock the lid and set to cook for 3 minutes under high pressure.
  8. 8. Once cooking is done, manually release the pressure.
  9. 9. Stir in the vinegar and adjust seasoning as needed.
  10. 10. Serve the soup hot.
