Sausage and Kale Soup

smoked Italian sausage, cut into ½-inch slices

Yukon Gold potatoes, cut into 1-inch pieces

carrots, cut into ½-inch slices

kale, ribs removed and leaves cut into bite-sized pieces

Magic Mushroom Powder or Diamond Crystal kosher salt

bone broth or chicken broth

sherry vinegar or apple cider vinegar
Instructions
- 1. Turn on the sauté function on your Instant Pot and heat the olive oil.
- 2. Add the onion and sauté for about 1 minute.
- 3. Stir in the sausage and cook for another minute until lightly cooked.
- 4. Add the minced garlic and cook until fragrant.
- 5. Add the potatoes, carrots, and kale, then sprinkle with Magic Mushroom Powder or salt.
- 6. Pour in the broth and stir well, then turn off the sauté function.
- 7. Lock the lid and set to cook for 3 minutes under high pressure.
- 8. Once cooking is done, manually release the pressure.
- 9. Stir in the vinegar and adjust seasoning as needed.
- 10. Serve the soup hot.
