Parmesan and Asiago Cheese Roasted Tomatoes

Ingredients

The tomatoes

  • 4 large tomatoes

The seasoning and oil

  • 1 Tbsp olive oil
  • 1 clove garlic
  • to taste salt
  • to taste freshly ground black pepper

The cheese

  • 1 oz asiago cheese
  • 1 oz parmesan cheese

The herbs

  • 1 ½ tsp Italian seasoning

Instructions

  1. Preheat the oven to 425 degrees.
  2. Place the halved tomatoes on a baking sheet.
  3. In a small bowl, mix the olive oil with minced garlic.
  4. Brush the olive oil mixture over the tomatoes and season with salt and pepper.
  5. Combine the asiago and parmesan cheeses, then sprinkle evenly over the tomatoes.
  6. Sprinkle the Italian seasoning over the tomatoes.
  7. Bake in the preheated oven for about 15 to 18 minutes until the cheeses are golden and the tomatoes are tender.
  8. Serve warm.
