Ingredients

The tomatoes

  • 2 lbs Roma tomatoes

The seasoning

  • cup olive oil
  • 6 cloves garlic, minced
  • 1 tablespoon bottled Italian seasoning
  • 1 tablespoon sugar
  • 1 pinch salt
  • 3 dashes ground black pepper
  • 2 tablespoons oregano, coarsely chopped

Instructions

  1. Preheat the oven to 300°F (148°C).
  2. Rinse the Roma tomatoes, drain, and pat dry. Slice them in half and place in a large bowl.
  3. Add olive oil, garlic, Italian seasoning, sugar, salt, black pepper, and oregano to the bowl. Stir to combine.
  4. Transfer the tomatoes to a baking sheet, arranging them in a single layer.
  5. Roast the tomatoes in the oven for 1 hour.
  6. Remove from oven and serve immediately.
