Instructions
- Preheat the oven to 250 degrees.
- Cut small tomatoes in half and larger ones in quarters.
- Place the tomatoes cut side up in a baking dish in one layer.
- Sprinkle the tomatoes with olive oil, basil, salt, and pepper.
- Roast the tomatoes until they are dry, about 2 to 3 hours for small ones and 5 or more hours for large ones.
- Refrigerate and use within 3 days, or freeze for up to 6 months.
