Ingredients

The tomatoes

  • 4 lbs tomatoes

The seasoning

  • 1 tbs olive oil
  • Several basil leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 250 degrees.
  2. Cut small tomatoes in half and larger ones in quarters.
  3. Place the tomatoes cut side up in a baking dish in one layer.
  4. Sprinkle the tomatoes with olive oil, basil, salt, and pepper.
  5. Roast the tomatoes until they are dry, about 2 to 3 hours for small ones and 5 or more hours for large ones.
  6. Refrigerate and use within 3 days, or freeze for up to 6 months.
