Ingredients

  • 3 large eggs

  • cup olive oil
  • cups buttermilk
  • ½ cup pumpkin puree
  • 2 teaspoons vanilla extract

  • a dash ground cloves
  • 2 cups whole wheat flour
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • ¼ cup water

Instructions

  1. Whisk together the eggs, brown sugar, and olive oil.
  2. Add buttermilk, pumpkin puree, and vanilla, whisking until smooth.
  3. Gently stir in cinnamon, nutmeg, cloves, flour, baking powder, and salt until just incorporated.
  4. Add water and stir until the mixture is smooth.
  5. Pour batter onto a medium hot griddle and cook for 3-5 minutes per side, until edges look dry.
  6. Flip pancakes and cook for an additional 1-2 minutes.
  7. Serve hot with butter, syrup, and toppings of your choice.
