Instructions
- Whisk together the Greek yogurt and milk, then let rest for 5 minutes.
- Melt the butter and set aside to cool.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
- Add the pumpkin puree, eggs, maple syrup, and vanilla to the yogurt and milk mixture, and whisk until blended.
- Whisk in the melted butter.
- Combine the wet and dry ingredients gently, being careful not to overmix.
- Preheat a skillet or griddle and melt some butter or use nonstick spray.
- Scoop the batter onto the skillet and cook until bubbles form, then flip and cook until golden.
- Repeat with remaining batter and serve with desired toppings.
