Ingredients

The pancakes

  • ¾ cup nonfat Greek yogurt
  • ¾ cup milk
  • 2 tablespoons butter
  • 1 ½ cups white whole wheat flour
  • 2 teaspoons baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • teaspoon ground nutmeg
  • ¾ cup pumpkin purée
  • 2 large eggs
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract

For serving (optional)

  • pure maple syrup
  • butter
  • chopped toasted pecans
  • vanilla Greek yogurt

Instructions

  1. Whisk together the Greek yogurt and milk, then let rest for 5 minutes.
  2. Melt the butter and set aside to cool.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  4. Add the pumpkin puree, eggs, maple syrup, and vanilla to the yogurt and milk mixture, and whisk until blended.
  5. Whisk in the melted butter.
  6. Combine the wet and dry ingredients gently, being careful not to overmix.
  7. Preheat a skillet or griddle and melt some butter or use nonstick spray.
  8. Scoop the batter onto the skillet and cook until bubbles form, then flip and cook until golden.
  9. Repeat with remaining batter and serve with desired toppings.
