Ingredients

  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground ginger
  • a generous pinch nutmeg
  • ¼ teaspoon salt
  • ½ cup pumpkin puree
  • 1 large egg
  • 1 tablespoon vegetable oil

Instructions

  1. Prepare a faux buttermilk by mixing vinegar with milk and letting it sit.
  2. In a bowl, combine flour, brown sugar, baking powder, baking soda, spices, and salt.
  3. In another bowl, whisk together the soured milk, pumpkin puree, egg, and vegetable oil.
  4. Combine the wet and dry ingredients, stirring until just mixed.
  5. Heat a griddle or skillet and grease it.
  6. Drop heaping ⅓ cups of batter onto the cooking surface.
  7. Cook until bubbles form, then flip and ensure they are cooked through.
  8. Serve with butter and maple syrup.
