Fruit Salsa with Baked Cinnamon Sugar Chips

Ingredients

The fruit salsa

  • 3 cups strawberries, chopped
  • 1 cup cantaloupe, chopped
  • 1 each green apple, chopped
  • 2 each kiwis, chopped
  • 1 cup raspberries, chopped
  • 3 tablespoons honey
  • ½ each lemon, juiced

The cinnamon sugar chips

  • 6 each tortillas
  • 2 tablespoons cinnamon
  • 2 tablespoons coconut sugar

Instructions

  1. Wash and chop all the fruit and add to a large bowl.
  2. Squeeze lemon juice into the bowl, add honey and a pinch of sea salt, then toss to coat.
  3. Preheat the oven to 350°F.
  4. Cut the tortillas into triangle shapes.
  5. Line a baking sheet with parchment paper and place the tortilla chips on it.
  6. Mix cinnamon and coconut sugar in a small bowl.
  7. Spray the tortillas with oil on both sides and sprinkle the cinnamon sugar mixture over them, flipping to coat both sides.
  8. Bake the chips for 9-12 minutes until crunchy, watching carefully to avoid burning.
  9. Allow chips to cool and serve with the fruit salsa.
